Organic Spaghetti Squash with Turkey Meat Sauce

Fall is here and what better way to celebrate by eating something that warms your body. I’ve been learning more about the benefits of eating with the seasons. Autumn is a transitioning time – a time to fill your body with foods such as squashes, root vegetables like potatoes, onions, and dark leafy greens like kale and warming herbs such at cinnamon, nutmeg, and rosemary. Connecting with nature and eating with the seasons is so important. Dishes will taste better, be full of maximum nutrients, and getting produce locally will benefit the community by eating what is readily available.

2-4 Servings

All available at your local Trader Joe’s

  • Himalayan salt + pepper
  • Dried/fresh oregano, basil + thyme
  • 1lb. organic ground turkey
  • 1 16. oz jar of organic marinara
  • 1 medium size sweet onion (diced)
  • 4 cloves of chopped garlic (I use frozen it’s so easy!)
  • Drizzle of avocado oil
  • Drizzle of organic olive oil
  • Dollops of pre-made pesto (in the refrigerated section)
  • Parmesan (optional)
  • Red pepper flakes (optional)

Baking the Squash

  1. Preheat oven to 400 F degrees while preparing squash
  2. Poke holes in squash with a fork, microwave for 4-5 minutes to soften
  3. Once soft, carefully cut the squash in half, removing seeds and goopy center
  4. Place foil on baking sheet
  5. Drizzle de-seeded squash with avocado oil and salt + pepper
  6. Place squash halves upside down on baking sheet and bake for 45 minutes
  7. Once finished let cook for 10 minutes
  8. Scrape out “spaghetti” while a fork and place in bowl until ready to serve

Making Meat Sauce

  1. Add a drizzle of olive oil to a sauté pan on medium adding onions and garlic
  2. Once onions are soft add ground turkey meat
  3. Season with herbs and salt + pepper
  4. Once meat is fully cooked (no pink fully brown) add full jar of marinara sauce
  5. Simmer for 10 minutes
  6. Serve on top of spaghetti squash
  7. Garnish with a dollop of pesto, parmesan, and red pepper flakes and pair with a glass of cabernet!
